- Prepare your watermelon by cutting it into chunks, removing any seeds if necessary. For the best texture, use very ripe, sweet watermelon that's been chilled in the refrigerator.
- Place the watermelon chunks, honey or maple syrup, lime juice, and sea salt in your blender. Blend on high until completely smooth and frothy, about 1-2 minutes.
- Taste the mixture and adjust sweetness if needed. Remember that flavors will become slightly less intense once frozen.
- Pour the mixture into a shallow freezer-safe container or ice cube trays. Cover with plastic wrap or a lid and freeze for at least 4 hours, or until firm.
- When ready to serve, let the sorbet sit at room temperature for 5-10 minutes to soften slightly. Scoop into bowls and garnish with fresh mint if desired.
Notes
Choose ripe fruit that feels heavy for its size with a creamy yellow spot. Adjust sweetness based on watermelon's natural sugar. For extra smooth texture, strain blended mixture through fine-mesh sieve before freezing. Use shallow container for even freezing.
