- Preheat the oven to 375°F (190°C).
- In a large bowl, toss the sliced peaches with 1/2 cup of sugar and cinnamon (if using). Set aside.
- Place the butter in a 9x13-inch baking dish and melt it in the preheated oven. Once melted, remove the dish from the oven.
- In a separate bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt. Stir in the milk and vanilla extract until just combined. Do not overmix.
- Pour the batter evenly over the melted butter in the baking dish. Do not stir. Spoon the peach mixture over the batter, distributing it evenly.
- Bake for 40-45 minutes, or until the crust is golden brown and the peaches are bubbly.
- Let the cobbler cool for a few minutes before serving. Enjoy it warm with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
For the best flavor, use ripe, fresh peaches. Adjust the sugar based on the sweetness of the peaches. You can add a crunchy topping like rolled oats or chopped nuts for extra texture. The cobbler can be assembled ahead of time and refrigerated until ready to bake.
