Ingredients
  • 4 cups cubed seedless watermelon (1-inch pieces)
  • 2 ripe peaches, pitted and sliced
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey or maple syrup
  • 2 tablespoons fresh mint leaves, chopped
  • Pinch of sea salt
  • Optional: ΒΌ cup crumbled feta cheese (omit for dairy-free)

Method

Instructions
  1. Prepare the fruits: Cut the watermelon into 1-inch cubes and place them in a large mixing bowl. Slice the peaches into thin wedges and add to the watermelon.
  2. Make the dressing: In a small bowl, whisk together the fresh lime juice, honey or maple syrup, and a pinch of sea salt until well combined.
  3. Combine and toss: Pour the dressing over the fruit mixture and gently toss to coat all pieces evenly.
  4. Add fresh herbs: Sprinkle the chopped mint leaves over the salad and give it one final gentle toss.
  5. Chill and serve: For best flavor, let the salad chill in the refrigerator for 15-20 minutes before serving. This allows the flavors to meld together beautifully.

Notes

Choose ripe but firm peaches, use seedless watermelon, add mint just before serving, and chill for 15-20 minutes for best flavor. Can add toasted almonds or pecans for extra crunch.
