- Prepare the Vegetables: Finely shred the cabbage using a sharp knife or mandoline slicer. Grate the carrots and thinly slice the red onion. Combine all vegetables in a large mixing bowl.

Notes
For best results, chill coleslaw for at least an hour before serving to allow cabbage to soften and absorb dressing. Can be prepared up to a day in advance as flavors improve over time.
