- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix with a whisk or electric mixer on medium speed until just combined - avoid overmixing.
- Dissolve the instant coffee granules in the hot water, then add this mixture to the batter. Stir gently until the batter is smooth and glossy.
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
Notes
For best results, make sure all ingredients are at room temperature before mixing. Avoid overmixing the batter - a few lumps are fine! Don't overmix once you add the wet ingredients to prevent developing gluten and making the cake dense.
