  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix with a whisk or electric mixer on medium speed until just combined - avoid overmixing.
  4. Dissolve the instant coffee granules in the hot water, then add this mixture to the batter. Stir gently until the batter is smooth and glossy.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.

Notes
