- Season salmon fillets generously with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add salmon fillets and cook for 4-5 minutes per side until golden brown and cooked through. Remove salmon from skillet and set aside.
- In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
- Add chicken broth and sun-dried tomatoes to the skillet. Bring to a simmer and cook for 2 minutes.
- Add fresh spinach and cook until wilted, about 2-3 minutes.
- Reduce heat to medium-low and stir in heavy cream, Parmesan cheese, and Italian seasoning. Simmer for 3-4 minutes until the sauce thickens slightly.
- Return salmon fillets to the skillet, spooning the creamy sauce over them. Cook for an additional 2 minutes to heat through.
- Garnish with fresh parsley and serve immediately.
Notes
Pat salmon fillets dry before seasoning for better browning. Use high-quality Parmesan cheese for the best flavor. Don't overcook the salmon – it should flake easily with a fork. For a thinner sauce, add a splash of additional chicken broth.
