  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cups beef broth
  • 1 cup grape juice (as a substitute for red wine)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 cup frozen peas
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Method
 

Instructions
  1. In a large bowl, toss the beef cubes with flour, salt, and black pepper until evenly coated.
  2. Heat olive oil in a large pot over medium-high heat. Add the beef in batches and sear until browned on all sides. Remove the beef from the pot and set it aside.
  3. In the same pot, add the chopped onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  4. Pour in the beef broth and grape juice, scraping the bottom of the pot to release any browned bits. Stir in the tomato paste, thyme, rosemary, and bay leaf. Return the beef to the pot and bring the mixture to a simmer. Reduce the heat to low, cover, and let it cook for 1.5 to 2 hours, or until the beef is tender.
  5. Stir in the frozen peas and cook for an additional 5 minutes. Remove the bay leaf.
  6. Preheat your oven to 375°F (190°C). Transfer the beef stew to a large baking dish. Roll out the puff pastry sheet and place it over the top of the dish, trimming any excess. Brush the pastry with the beaten egg for a golden finish.
  7. Bake for 25-30 minutes, or until the crust is golden brown and flaky.

Make Ahead: Prepare the beef stew a day in advance and assemble the pot pie just before baking. Crust Variations: For a crispier crust, brush the puff pastry with melted butter before baking. Extra Flavor: Add a splash of Worcestershire sauce to the stew for an extra umami kick.
