- Prepare the chicken by patting it dry with paper towels. Cut into bite-sized pieces and season evenly with garlic powder, paprika, black pepper, and salt.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook for 5-6 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
- Reduce heat to medium and melt butter in the same skillet. Add minced garlic and sauté for 1 minute until fragrant.
- Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
- Return the cooked chicken to the skillet and toss to coat in the garlic butter sauce. Cook for another 2-3 minutes to heat through.
- Stir in fresh parsley and serve immediately over rice, mashed potatoes, or with your favorite vegetables.
Notes
For the most authentic Texas Roadhouse flavor experience, make sure your skillet is nice and hot before adding the chicken. If you love creamy sauces, try adding a splash of heavy cream to the garlic butter sauce for an extra-rich version.
