- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, peanut butter, brown sugar, and granulated sugar until light and fluffy. This should take about 2-3 minutes with an electric mixer.
- Beat in the eggs one at a time, then add the vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Stir in the oats and chopped peanuts (if using) until evenly distributed throughout the dough.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon.
- Bake for 10-12 minutes, or until the edges are golden brown but the centers are still slightly soft. For chewier cookies, bake for the shorter time.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Don't overmix when combining wet and dry ingredients. Chill dough for 30 minutes for thicker, chewier cookies. Use quality natural peanut butter without added sugars or oils. Customize with chocolate chips, raisins, or dried cranberries.
